These babies, as everything else is in Jeni's kitchen, are handmade every step of the way. We didn't grow and harvest the cashews or keep the Ohio bees that so generously donated their honey, but we did make the ice creams (Ugandan Vanilla Bean, Salty Caramel, and Pistachio & Honey) and place them between the best macaroon sandwich "bread" you'll ever eat.
Your options:
Salty Caramel with Smoked Almonds
Pistachio
Orchid Vanilla
Cashew Banana Curry

Foodies, etymologists, and concerned citizens, please note our spelling of macaroon. There's some debate as to how to spell the name of a sandwich cookie composed of egg whites, sugar, and ground almonds or coconut.
We've always called these from-scratch babies "macaroons" rather than "macarons" mainly because we started making them back when they were becoming popular and Americans and everyone else still called them "Parisian Macaroons". Even the great Parisian pastry chef Pierre Herme called them macaroons in the English version of his 2001 book.
Calling a macaroon a macaron, to us, is a lot like saying "Parmigiano Reggiano" in a fake Italian accent when you are asking Mike the Cheese Guy at the North Market or your favorite cheesemonger for a hunk of Parmesan. To the ears' of most of us non-French-speaking folks, the word macaron just doesn't sound right.
Now, with that pedantry out of the way, here are some fancy photos of process and product (courtesy of multi-talented Brittany Sue in our kitchen):Cashew Banana Curry Macaroons being piped to perfection. All macaroons in the Macaroon Sandwich Collection are almond-based and come in an array of gorgeous pastels.
Cashew Banana Curry Macaroon. Bananas & Honey Ice Cream edged in roasted and salted cashews set between curried macaroons that are the striking color of Indian turmeric.
The Orchid Vanilla Macaroon Sandwich, a feast for all the senses: Ugandan Vanilla Bean ice cream (whose main ingredient comes from an orchid) with a dollop of black currant jam between two purple macaroons. A drop-dead, exotic Midwestern beauty.
